Delicious & Easy Vegan Vanillekipferl Christmas Cookies – Only 6 Ingredients
Last Christmas I wanted to make some vegan Christmas cookies and found that initially a bit intimidating. I quickly realized that there is no need and there are a few cookies that are easy to make vegan. Turns out one of my all-time favourite Vanillekipferl is really and below you will find my vegan Vanillekipferl Christmas cookies recipe.
Growing up in Germany Vanillekipferl are just part of Christmas celebrations. These half-moon shaped cookies are just delicious and melt in your mouth. I could eat them all the time. I have since made them several times for Christmas for friends but never tried to make them vegan. Turns out it is rather easy as there are no eggs in these cookies so no need to replace that.
Vegan Vanillekipferl Christmas Cookies
Vanillekipferl only need a few basic ingredients:
Butter or in the case of vegan ones magarine/vegan butter
Ground hazelnut or almonds
Icing sugar and vanilla sugar to coat them
And that’s it to make your first vegan Christmas cookies! They are quite easy to make but take a bit of patience when coating them in icing sugar or you can take the approach I took in the first picture to speed things up.
How To Store Vanillekipferl
If you want to store them use a box and maybe add a bit more vanilla sugar on top. If you keep them for 1-2 days in the box it will ensure that the vanilla flavour spreads and is stronger.
This is the Christmas themed box that I am using. It is really easy to transport them this way. Love making these cookies as a gift when visiting friends and family over the Christmas period. They make a great special present as well.
Step By Step Recipe for Vegan Vanillekipferl Christmas Cookies
- 250g flour
- 200g vegan butter
- 100g ground almonds or hazelnuts
- 80g sugar
- vanilla sugar
- icing sugar
- Mix all ingredients (except the vanilla and icing sugar) in a bowl until it comes together in a dough.
- Leave to rest for 10 minutes.
- Form half-moon shaped crescents and put on a baking sheet.
- Bake at 200°C for about 5 - 7 minutes. They should not change in colour so make sure to not bake longer than 7 minutes.
- Mix the vanilla sugar with the icing sugar in a bowl and turn the cookies while still warm in the sugar mix.
- Cool the cookies on a cooling rack.
If you can resist eating all cookies immediately after baking - I find they taste best after 2-3 days. Love taking them when visiting friends and family.
